食與譜, 緬甸街 Food & Writing, Myanmar Street

不同於1950-60年代從金三角撤退來台的泰北「異域」孤軍,在1960年代爆發排華事件後,一群原本居住在緬甸的華僑,因應當時中華民國政府對華僑的友善政策,他們陸續移居至台灣。座落於新北市中和區的華新街,也因為早期鄰近有工作機會的工廠,在時代交織的背景中成為這批新住民的家,也就是現今我們所認識的「緬甸街」。走入緬甸街,最醒目的即是坐在奶茶店前悠閒喝著奶茶、聊著天的在地居民們,接著映入眼簾的是寫著緬文,有時候也並列中文的招牌及菜單,以及,跟隨身體的移動而遷徙來台的各式緬甸料理。
料理時的雙手,像是在上演一齣戲。
料理手路的熟捻、力道、變化,不僅在形塑眼前的食物,也在滿足或是創造味蕾的經驗。
當身體跨越邊境,口味也跟著遷移。
記憶的回味、重返、延續,
透過料理的技藝,正在廚房、在餐桌、在咀嚼中上演。
In contrast to the “Lost Army,” who retreated to Taiwan from the Golden Triangle in the 1950-60s, there is a group of overseas Chinese who originally resided in Myanmar. In the 1960s, anti-Chinese incidents erupted in Myanmar, coupled with the friendly policies of the Republic of China government towards overseas Chinese. This led immigrants from Myanmar to gradually relocate to Taiwan. Today, Huaxin Street in Zhonghe District, New Taipei City, known as “Myanmar Street,” became the home for these new residents against the backdrop of job opportunities in nearby factories during that era. Walking into Myanmar Street, the most prominent sight is the local residents sitting in front of milk tea shops, enjoying tea and chatting. Following that, one would notice signs and menus written in Burmese, sometimes alongside Mandarin, as well as a variety of Burmese dishes that migrated to Taiwan with the movement of people.
Hands in cooking are like actors on a stage.
The skill, strength, and creativity in the art of cooking not only shape the food before our eyes, but also craft experiences that satisfy and awaken our taste buds.
As the body crosses borders, so does taste.
Memories linger, return, and extend through the culinary craft, unfolding in the kitchen, at the dining table, and within every bite.
